Yogurt-based foods

Purani

You will need:
2 medium size courgettes
1 onion
Yogurt (as much as it will take)
salt
pepper

Wash and slice the courgettes in cubes. On medium heat caramelize the onion in some olive oil and add the courgettes. Keep the courgettes till they are a bit softer and add the spices. Once the courgettes are really soft take them off the heat and leave them to cool just a little bit. Then take the courgette mix and (either whole or in small amounts) place then in a strainer (like the tea strainer but bigger). Then press with a fork so the liquid gets disposed and you are only left with the courgette mixture (looking like a paste).

Once this is done let the courgette mixture (sans the liquid) cool for a while longer. Once cooled add as much as yogurt as you deem necessary and place in the fridge. Leave in the fridge and take out whenever you wish to eat.

Mantu

1 cup pasta (any type will do)
1tsp olive oil
pinch of salt
Yogurt (as much as it will take)
a pinch of oregano
some garlic (optional)

Boil some water and add the olive oil and salt. Once ready add the pasta (I usually go for tube-like pasta like rigatoni, stortini or penne) and let it boil. Once the pasta is 'al dente' drain and let it cool down. Once the pasta is cool add as much yogurt as you wish (I usually opt for a medium consistency; not like a soup nor like a usual pasta sauce). To finish stir in a pinch of oregano and garlic. Try not to put too much oregano as it gives a more bitter taste. As for the garlic, try to either finely chop it or take it through a press garlic machine or a mortar.
