Vegetarian Dishes

Fasolakia (Green Beans)  
Fasolakia
You will need: 

500gr frozen or fresh green beans
1 large onion or 2 small ones
3 Tsp of tomato puree (canned or freshly grated) 
4 small potatoes
olive oil 
salt and pepper 
freshly chopped or dry parsley 
(cube of vegetable stock_optional)

Instructions

In a large pan heat up some olive oil and add the chopped onions. Once they have softened up a bit add the potatoes, sliced into thick cubes. Turn until the beans are soft and cover with water. Add the tomato puree, salt and pepper (and stock if used). Put the heat down a little bit cover and let it cook for about 30mins or until the beans and potatoes are soft and the most of the water has evaporated. 

Once ready serve with feta cheese.

Asparagus&Mushroom Risotto

mushroom risotto
You will need: 
500g spears of asparagus &300gr mushrooms
half a cup arborio rice
One-fourth cup of white wine
2 cups of vegetable broth (brought to the boil and kept warm)
1 shallot
1 white onion
2 tbs butter
2 tbs olive oil 
salt and pepper
One-fourth cup parmesan cheese


Cut the hard ends of the asparagus, wash them and cut into 3cm long spears. Leave them aside.

Bring the broth to the boil and keep on the stove on a very low heat just enough to keep it warm for the cooking process. 

In a pan fry your shallot and onion in butter and oil. Once the onions have softened up a bit add the arborio rice and stir well until translucent. Then add the cup of wine and stir till the wine has been absorbed. Then start adding the broth. You should add one cup at a time, stir until it has been absorbed and then add the next cup. About a cup and a half away from the last cup remaining stir in the asparagus. and stir well. Once you have added the last cup and it has almost absorbed add the cup of parmesan and stir well. 

Take the pan off the heat and cover. Wait a few minutes for the mixture to cool a bit and then serve with a glass of cold dry white wine.
